As you know by now, I love Mexican food. It's my favorite and I am always trying to think of different ways to enjoy it. This bowl is awesome for lunch or dinner. I have even made some and portioned the ingredients out for an awesome, delicious and healthy lunch!
1 lb. lean, ground turkey
2 tablespoons taco seasoning
1/2 teaspoon garlic salt
1 cup corn (can be canned or fresh corn cut off the cob)
1 cup cherry tomatoes, halved
1/4 cup cilantro
1/4 cup red onion, diced
1/4 cup green pepper, diced
1/3 cup cheese, shredded
Plain Greek yogurt (for topping)
Your favorite salsa
1 cup whole grain brown rice, cooked
1. First, cook your turkey in a pan on stove. Add the taco seasoning and garlic salt to your turkey and mix evenly into the meat. Cook for about 10 minutes, until the meat is cooked through.
2. Cook your rice according the directions on the package.
3. Chop all of your fresh veggies!
4. In a bowl coming 1/4 of each ingredient and serve!
Yes, that's it. Those are such easy and quick directions. It's so fast and so delicious. That recipe creates about 4 servings. You can feed your family or save some for leftovers. It's so easy to throw together. I hope you love it!
