Avacado Egg Salad

I have a slight obsession with avocado!  I can usually add it to anything I'm eating or just eat it alone while sprinkling on some garlic salt.  So yummy!  Okay, now that I'm ready to head to the kitchen to eat an avocado, let me first tell you about a quick recipe I love to make.  It's easy to make and then throw in the refrigerator so lunch is ready for the next few days.  I love hearing about new avocado recipes, so if you have a good one, please share!  Tag @hbgcommunity and use the hashtags #hbggirls and #hbgblog so we can all see your delicious avocado recipe!  Here's mine:

 

Ingredients

8 hard boiled eggs

2 avocados (pit and skin removed)

1 teaspoon lemon juice

1/3 cup chopped white or yellow onion

handful of chopped cilantro

1/2 teaspoon fine sea salt

1/2 teaspoon black pepper

bread for serving

 

Directions

1. Put first 7 ingredients into a bowl.

2. Mash and stir to combine.

3. Place the avocado egg salad on your favorite bread and enjoy!
